Sautéed Garlic Spinach

Shallots and garlic are alliums, a family of vegetables that also includes onions, scallions and garlic scapes. Alliums provide a lot of delicious flavor to a variety of dishes and have powerful health properties, particularly as prebiotic ingredients. Prebiotics are carbohydrates in certain plant foods that encourage the growth of and stimulate the activity of bacteria that benefit health.

Serves 2

In a large skillet, heat 1 Tb olive oil over medium heat. Add 1 Tb finely chopped shallot and cook for a few minutes until transparent. Add 2 cloves crushed or minced garlic and cook until fragrant. Add 5 ounces fresh spinach and stir to mix. Cook until spinach is wilted. Before serving, squeeze the juice of ½ lemon over top. Season with crushed red pepper flakes, salt and pepper to taste.
