Tropical Green Smoothie

A refreshing tropical smoothie tastes like warm weather. You can use individual types of fruit or buy a frozen mixed fruit blend, which works perfectly in smoothies. Smoothies are best enjoyed immediately but you can portion out whole ingredients in advance, especially if you’re planning an on-the-go meal. At home, serve this as a smoothie bowl with cubed fruit, chia seeds and granola on top.

Serves 2

Blend 1 banana (fresh or frozen), 1 cup chopped mixed tropical fruit such as mango, pineapple and/or passionfruit (fresh or frozen), 1 cup spinach (fresh or frozen), 2 cups milk (dairy or non-dairy) and 1 cup plain Greek yogurt (dairy or non-dairy). Add ice until the smoothie reaches desired consistency and temperature (optional). Pour into 2 glasses and sprinkle 1 Tb unsweetened coconut flakes over top.

Pro tip: add lime juice and zest for a hint of tartness.
