Tuna in Endive Boats

Endive is an underutilized vegetable that is nutritious despite some varieties’ lack of color. Part of the chicory family, endive is slightly bitter and crunchy. When separated into leaves, you are left with “boats” that are great scooping vessels for softer foods. To make tuna salad, look for canned light tuna which is the lowest in mercury.

Serves 1-2

Open and drain 1 5-ounce can of light tuna. Place in a bowl and mash with a fork. Add ½ avocado and a squirt of Dijon mustard and continue to mash. Add the juice of ½ lemon, 1 Tb chopped red onion and black pepper to taste. Serve with 2 heads of endive separated into leaves.
Pro tip: serve a selection of foods such as bean dip or beet tzatziki with endive and veggie sticks for an easy snack plate.
