Herb Roasted Zucchini

Known for being easy to grow in direct sunlight, zucchini thrive in many gardens. Pairing zucchini with dried herbs makes for a simple summer side dish that tastes delicious with other vegetables such as eggplant, peppers and tomatoes. Mix herb roasted zucchini with pasta or serve with potatoes and protein such as Baked Cod or Bean Salad.

Serves 4

Preheat the oven to 400°F. Chop 6 zucchini into bite-sized pieces and spread out on a lined sheet pan. Toss with 2 Tb olive oil, ½ tsp dried oregano, ½ tsp dried thyme and ½ tsp dried rosemary and salt and pepper. Roast for 30 minutes or until tender. 

Pro tip: incorporate fresh herbs by tossing this dish with 2 Tb chopped fresh basil leaves before serving.
