Spicy Cashew Dressing

Although cashews are not technically nuts, they are classified as nuts because of the way they are eaten. They are also similar in nutritional profile to other nuts due to their heart-healthy fats and protein. Adding cashews to a dressing provides instant creaminess. Massage this dressing into a kale salad, drizzle it on roasted proteins, or use less water to turn it into a dip.

Serves 4-6

In a high-speed blender, blend 1/2 cup roasted, unsalted cashews, 1 Tb toasted sesame oil, the juice of 1 lemon, 1 tsp maple syrup, 2 tsp grated ginger and 1 tsp sriracha. Add ¼ cup water and blend to desired thickness. Adjust salt to taste.
