Crunchy Apple and Cabbage Slaw

A crucial step of making any cabbage slaw is massaging it by hand to make sure the cabbage softens. Prepare apple and cabbage slaw in advance so it has time to marinate in the oil and vinegar. Serve with BBQ tofu (prepare Crispy Baked Tofu and toss with ¼ cup barbecue sauce before plating).

Serves 4

In a large bowl, add 2 cups shredded red cabbage, 2 grated carrots, 1 bunch chopped scallions, 2 Tb apple cider vinegar and 2 Tb olive oil. Massage well. Slice 1 apple into small matchsticks. Try a New York state variety like Golden Delicious or McIntosh. Allow the slaw to marinate for ~15 minutes before serving. Season with salt and pepper to taste.
