Peel 4 large carrots. Discard the first peelings and continue to peel the carrots to make noodles in a ribbon shape. In a small bowl, add a 1-inch piece of grated ginger, juice of 1 lime, 1 minced or pressed garlic clove (optional), 1 Tb creamy peanut butter (or tahini) and 1 tsp low-sodium soy sauce (or tamari). Mix until creamy. Add the noodles to the sauce and toss well so that the noodles are coated. Top with 2 Tb chopped cilantro before serving.
