Watermelon Greek Salad

A traditional Greek Salad contains tomatoes, cucumbers, onion, feta cheese, olives, oregano and salt and pepper. Known as horiatiki, a village salad, it’s a classic Greek dish that can accompany any protein like warm chickpeas or grilled fish. This nontraditional variation incorporates watermelon.

Serves 4

Slice 1 large English cucumber into half moons and place into a large bowl. Add 2 cups cubed watermelon, 1 cup sliced grape tomatoes, ¼ sliced red onion and 3 ounces feta cheese. Season with 2 Tb olive oil and 1 Tb red wine vinegar. Toss gently. Serve with freshly ground black pepper and finely chopped mint leaves (optional).
