Citrus Salmon

Salmon is a fatty fish (the heart-healthy kind of fat) so it pairs well with bright, tart citrus and fresh herbs. Impress your guests with this colorful main dish served alongside simple Roasted Brussels Sprouts or Lemon Cauliflower and Herbed Wild Rice.

Serves 6-8

Preheat the oven to 400°F. Slice 1 navel orange, 1 lemon and 1 lime. Arrange half of the citrus slices on the bottom of a baking dish. Place a 2 lb salmon fillet, skin side down, on top of the citrus slices. Squeeze the juice of 1 lemon over the fillet and sprinkle with salt. Top the salmon with the remaining citrus slices, 1 Tb chopped fresh dill and 1 Tb chopped fresh curly parsley. Bake for about 25 minutes until the salmon is flaky. (Optional) drizzle olive oil and sprinkle additional herbs over the salmon before serving if desired.
