“Bacon” Tempeh

Soy foods are misunderstood, but the latest research shows they provide health benefits to a way of eating, especially when they are used as a substitute for animal protein. Tempeh is a soy product that is typically fermented with whole grains. Because of its firm texture, it is a great plant-based alternative to animal foods. Prepare “bacon” tempeh in cubes for a vegetarian cobb salad, leave it in strips to layer on a BLT-inspired sandwich or serve it on skewers with a creamy dipping sauce.

Serves 2-3

Chop 8 ounces tempeh into cubes or slice it into strips. Place tempeh in a shallow bowl with 3 Tb low-sodium tamari, 1 tsp smoked paprika, 1 tsp liquid smoke, ½ tsp onion powder and 1 Tb maple syrup. Toss the tempeh so it is coated well. Marinate for at least 30 minutes. Transfer tempeh without the remaining marinade to a lined baking sheet. Bake for 20 minutes, tossing halfway.
