Cinnamon Apple Oatmeal

Cold, dark mornings call for warm, cozy breakfasts. For this recipe, choose rolled oats, also known as old-fashioned oats, and Honeycrisp or Pink Lady apples. You can double the batch of cinnamon apples to use as a topping for chia pudding, whole grain waffles or pancakes, yogurt and more. If preparing the oats on the stovetop seems like too much work in the morning, pop the milk and oats in the microwave on high for 3 minutes. Use a large bowl to make sure the milk doesn’t overflow.

Cut 1 apple (Honeycrisp or Pink Lady) into bite-sized pieces and place them into a saucepan over medium heat. Cover and cook for 5 minutes, stirring a few times. Add 1 tsp coconut oil. Stir and cook for another few minutes. Add ⅛ tsp ground cinnamon and a splash of maple syrup (optional). Cook until the apple pieces reach desired texture. While the apples are cooking, bring 1-¾ cups milk (dairy or non-dairy) and a pinch of salt (optional) to a boil in a small saucepot. Lower to medium heat and stir in 1 cup rolled oats and ¼ tsp ground cinnamon, stirring every couple of minutes until the oats are creamy. Top oats with warm apples and ½ cup plain Greek yogurt. Sprinkle ⅛ tsp ground cinnamon over top.
