Roasted Delicata Squash Rings
Delicata squash has a sweet, orange flesh that pairs well with warming spices such as ground cumin and cinnamon, as well as spices with more heat including cayenne pepper and paprika. Delicata squash is a favorite winter side dish because its skin is both easy to slice and edible. Slicing delicata squash into rings is especially fun for young eaters!
Serves 4
Preheat the oven to 425°F. Slice off both ends of 2 delicata squash and discard. Cut the squash into thick rings. Lay them on a flat surface and scoop out the seeds with a spoon. Reserve the seeds to roast later. Toss squash rings with 1 Tb olive oil, ¼ tsp cayenne pepper, ¼ tsp ground cumin and salt and pepper. Spread out squash on a sheet pan lined with parchment paper. Roast for 20 minutes, flipping the rings over halfway.
