Simple Mixed Greens Salad

Mixed greens include lettuces, arugula, spinach and other leafy greens. Side salads are one of the easiest ways to add vegetables to a meal because you can buy pre-washed greens. Top mixed greens with crunchy vegetables and drizzle with a homemade salad dressing

Serves 2

In a large bowl, add 5 oz mixed greens, 2 thinly sliced mini seedless cucumbers and 6 thinly sliced large radishes. To make the dressing, combine 2 Tb olive oil, 1 Tb white balsamic vinegar, 2 tsp Dijon mustard and the juice of ½ lemon. Drizzle the dressing over the greens and toss well. Season with salt and pepper to taste.

Pro tip: for a salad dressing with a few more ingredients, try a Shallot Vinaigrette or Miso Ginger Dressing.
