Edamame Dip

Many legumes besides chickpeas can be blended into creamy, flavorful dips. Edamame, or soybeans, are a great main ingredient in a dip that can be served with crackers, bread or veggie sticks as part of a crudité platter

Serves 4

Prepare 12 oz frozen shelled edamame according to the directions on the package. In a food processor, blend edamame, 3 cloves roughly chopped garlic, ½ cup chopped scallions (mix of white and green parts), the juice of 1 lemon and ¼ cup olive oil. While blending, add additional oil or splashes of water to adjust consistency. Season with salt and pepper to taste.

Pro tip: white beans are also delicious in a dip.
