Spring Market Season: Peas
The first sight of green things appearing at the market is always exciting for me. We’ve made it out of winter with warmer, sunnier days ahead. It may seem simple, but one of my favorite ingredients to come into season this time of year are fresh spring peas. I would never knock frozen or canned pea options, and often use them. However there's something about fresh peas that is just, well, fresher. It's the perfect sweet pop to so many recipes. Peas, whether frozen, canned or fresh, are also a delicious, nutrient dense addition to your diet.
Peas are a good source of complex carbohydrates and fiber, which keeps us fuller for longer. They also contain just about every essential vitamin and contain a relatively high amount of protein per serving. 1 cup of peas contains about 8 grams of protein. Adequate protein intake is important for building and maintaining muscle, bone, skin and cartilage. As one of the best plant sources of protein, peas are a great addition to a varied vegetarian and an omnivore diet to help meet protein goals.
