All Purpose Dry Rub
This all-purpose meat dry rub can be used for chicken, beef, and pork. Simply mix together all ingredients to make a large, shelf-stable batch you can keep in your pantry or other cool, dark place. Add to your meat and leave to marinate or add olive oil, soy sauce or Worcestershire sauce, and citrus juice to make a saucier marinade. The measurements don’t need to be precise, but adding soy sauce will make it saltier.
Ingredients
½ cup paprika, or ⅓ cup smoked paprika
¼ cup kosher salt
¼ cup freshly ground black pepper
¼ cup brown sugar
¼ cup chile powder
3 tablespoons ground cumin
2 tablespoons ground coriander
1 tablespoon cayenne pepper, or to taste
Combine all ingredients and store in a cool, dark place.
