Garlicky Green Beans with Cashews

Steamed green beans taste fresh and tender but have a great bite. Cashews add crunch and creaminess. Pair this flavorful side dish with Crispy Baked Tofu or Baked Salmon and Cilantro Lime Brown Rice.

Serves 4

Heat 1 Tb olive oil and 1 tsp toasted sesame oil in a deep skillet over medium-high heat. Add 1 lb trimmed green beans and cook for 5 minutes until the beans are bright green. Add 2 cloves minced garlic and cook until the garlic is fragrant.

Add ½ cup water, cover the skillet and steam the beans for an additional minute. Remove the beans from the skillet and serve with a drizzle of low-sodium soy sauce (or tamari) and ¼ cup chopped, unsalted cashews.
