Savory Oatmeal with Spinach and Eggs

Many of us are used to the traditional oatmeal toppings of maple syrup or brown sugar and raisins. But oatmeal also provides a wonderful base for savory toppings—similar to grits! The combinations are endless, but here’s one of our favorites below.

Serves 3

In a small pot, bring 1-1/2 cups water and 1/4 tsp salt to a boil. Add 1/2 cup dry steel cut oats. Reduce heat to low. Cover and cook for 15 minutes, stirring occasionally. While oats are cooking, heat 1 Tb olive oil in a saucepan over medium heat. Add 1/3 cup chopped scallions and 3 cups spinach. Cook until they are tender. Remove the scallions and spinach from the saucepan. Prepare 3 eggs as you wish and season with salt and pepper. Once oats are done, remove from heat. Top oats with scallions, spinach and egg. Garnish with red pepper flakes to taste.
