Katchkie Farm Cucumber, Melon & Arugula Salad

One reason why cucumbers and melons taste so refreshing during the summer months is their high water content. Savor the best flavors of summer while staying hydrated with this recipe from Katchkie Farm, our organic farm in Kinderhook, NY.

Serves 8

Whisk together 3 Tb balsamic vinegar, 2 tsp Dijon mustard, 2 tsp vanilla extract, ½ tsp sea salt and ¼ tsp black pepper in a bowl until well combined. While continuing to whisk, slowly add ½ cup olive oil. In a separate bowl, combine 3 lbs diced melons (honeydew, cantaloupe and/or watermelon), 2 large peeled and chopped cucumbers, 4 small radishes cut into matchsticks, 5 oz wild arugula, 6 oz crumbled feta and 1 oz torn basil leaves. Toss with vinaigrette and serve.
