While this recipe screams “party appetizer,” it’s just as good for weekday snacks at home or on-the-go. Nuts and seeds are an easy way to incorporate plant protein, fiber and heart-healthy fats into a way of eating. Roast raw nuts and seeds with flavorful ingredients like herbs and spices for a tasty snack. Other Mediterranean nuts that would go well with this recipe include pistachios and walnuts. Serves 8+

Preheat the oven to 300°F. In a mixing bowl, combine 1 cup almonds, ½ cup cashews and ¼ cup pumpkin seeds (all nuts and seeds should be raw and unsalted). Drizzle 1 Tb olive oil over the nuts and seeds. Add 1 Tb finely chopped fresh rosemary, ¼ tsp ground cumin, ¼ tsp sea salt and ¼ tsp cracked black pepper. Mix well. Spread out on a lined sheet pan and roast for 20 minutes, tossing halfway.
