Crunchy Cucumber Salad

Cucumbers are a very hydrating food; they contain over 90% water. When paired with bright flavors like herbs, scallions or other alliums and flavor boosters like red pepper flakes, sliced cucumbers become a refreshing and bright salad. This recipe can accommodate different flavor preferences well. Swap scallions for red onion or add honey for a less tangy flavor. Toss in cilantro or other shredded raw veggies (carrots, cabbage, bell pepper). Serve with any grilled protein like shrimp, salmon, tofu or chicken at an early summer barbecue.

Serves 4

Thinly slice 6 mini seedless cucumbers and add to a mixing bowl. Add 2 Tb thinly sliced scallions, 2 Tb unseasoned rice vinegar, 2 tsp toasted sesame oil, 1 tsp red pepper flakes and a pinch of salt. Toss well. Refrigerate overnight (optional). Sprinkle 1 tsp white sesame seeds on top before serving.
