Melon Mint Salad

A salad doesn’t have to be just greens and raw veggies. Salads can have a base of whole grains, legumes, citrus or in this case, melons. Serves 4

Slice 1 honeydew melon and 1 cantaloupe in half. Scoop out the seeds. Use a melon baller to scoop melon balls from one half of each melon (reserve the remaining halves for another purpose). Place in a bowl. Add 6 ounces blackberries. In a separate small bowl, whisk 2 teaspoons honey and the juice of 1 lime together. Pour the honey and lime juice over the melon and blackberries. Add 10 finely chopped fresh mint leaves. Gently toss. If you are making this recipe in advance, toss with honey, lime juice and mint just before serving.
